I found another great recipe on Epicurious.com: Parpadelle with Pancetta, Broccoli Rabe, and Pine Nuts. I made it before going on vacation last week and will definitely make it again. A few modifications:
- I substituted gluten-free brown rice pasta from Trader Joe’s for the Parpadelle; Tinkyada Joy brand works well, too, and I bet this recipe would be tasty with some quinoa pasta.
- I needed to use up some bacon, so I used that instead of pancetta. The bacon grease made a tasty substitute for the olive oil, too. 🙂
- I added lemon (about a Tbsp or two?) at the end, and salt/pepper.
