a friend came over after church last week and I made us these wraps:
it’s been four months since I last posted here (talk about a crazy fall), plus my friend enjoyed this so much she wanted the recipe, so I decided to end the too-long blogging hiatus and post. without further ado, here’s the recipe:
chicken salad + kale cabbage wraps
2 c. cooked chicken meat, shredded
1.5 c. radishes, diced
1.5 c. celery, diced
1/2 c. mayonnaise
1 T mustard (I prefer dijon, brown, deli-style, or whole-grain)
1 T fresh lemon juice (or 2 tsp from concentrate)
1/2 bunch kale (I used curly-leaf, but Red Russian is my favorite!)
1 T white wine vinegar
4 cabbage leaves
directions:
Combine the chicken, radishes, celery, mayo, mustard, and lemon juice in a bowl and stir until chicken and veggies are well coated. salt & pepper to taste.
Devein the kale – remove the hard stem running up the middle of each leaf – and then roughly chop. Put in a bowl with vinegar and a little salt & pepper and stir to coat.
In each cabbage leaf, spoon chicken salad and kale; fold into a wrap and enjoy!
